So, I have decided that our dinner menu is in a funk. I make the same meals over and over and over... They're good meals but they're starting to get old. So, I've decided to start making new and exciting meals especially for dinner. Our lunch may just end up consisting of leftovers and sandwiches but I'm okay with that.
My sister and I went in on a bountiful basket (a co-op for fresh fruits and veggies). We got some vegetables that we don't normally eat such as; asparagus, zucchini, spinach and sweet potatoes. Chris and I aren't a fan of sweet potatoes but luckily Nolan loves them. Now, when it comes to zucchini, Chris wont touch them with a ten foot pole! But I've gotten him to agree on trying them my favorite way: fried! I want to try and be a little more healthy and change up our diet. It'll make things more interesting and hopefully a little more healthy.
So tonight I started our revamp on dinner. I made stuffed chicken, roasted asparagus, and a sweet potato casserole. Chris thought the chicken was great and I was really proud of how good they looked. The asparagus didn't turn out like I wanted, but it was good and Chris enjoyed it. We both had a little of the sweet potato, but since we've never really eaten it I didn't know how much sugar to add. I probably added a little too much! So tonight was a success.
Can't wait to try the fried zucchini tomorrow.

Life So Far

When we started this blog, we thought we'd post more. Chasing a toddler, putting your home on the market, looking for a new job, giving birth to another boy, taking your home off the market on a leap of faith, getting a new job close to home that means you were correct in taking your home off the market, and trying to get situated in a new job ended up tasking our priorities, so we're sorry to the millions of readers who refresh every moment of every day just waiting for an update.
We have our little Nolan. Nolan Xavier, born 9/8/10. He's already big enough to nurse *and* eat a whole container of baby food before feeling full. He rolls around all over the place. We're very happy our little surprise is with us.
His older brother, Liam, just celebrated his 2nd birthday. We're really excited to see him go so nuts over his trains. His aunt and Grandmother bought him a few Ikea train sets a few Saturdays ago, and when he got the package torn apart he didn't put his trains down until bedtime. All said, it was a good 5 hour train session.
Chrissa is still a rockstar mom and wife. She finds time to entertain her friends, keep the house a home, take care of her boys, and keep her husband unbelievably happy.
Chris started a new job. He's really excited at the new opportunity. His commute dropped from 55 minutes to 2 minutes. Every day he comes home for lunch, so no more late night scrambles to figure out what to eat the following day. Much better all around.
This year we plan to do better with the blog, and make it more of a public journal of the fun our family has. We're looking forward to Baby Animal Days, the Cruise-In, a Bear Lake trip (or two!!), Raspberry Days, Peach Days, the Gardener's Market, and on and on.
